Brick 90: pro brick built pizza oven

Want a genuine traditional Spanish brick finished artisan-built pizza oven with the capacity to satisfy large gatherings of guests? The Fuego Brick 90 garden pizza oven is the choice of cooking professionals and cooks who really like to entertain with fire and passion on a grand scale.

So large is the Brick 90 brick pizza oven, in under two minutes, it is capable of creating six large pizzas with delicious yet difficult to achieve crisp, bubbled bases with chargrilled tinged toppings.

Built entirely by hand, by artisan craftsmen, from one piece of Castilian fire clay, our largest brick pizza oven has a capacious 800mm internal diameter and is substantially built, weighing 950kg. Yet it is ready to cook pizza just 30 minutes from being lit.

It looks stunning, too. Envious guests will love not only savour the food it produces and the wood fired pizza oven aroma, they’ll appreciate the traditional terracotta brick finish of the outer dome and door. The Fuego Brick 90 is a real showstopper.

 

Built by expert Spanish artisans

10 years is the length of time it takes to become a true master in the art of wood oven dome shaping by hand. This is how long artisan craftsmen who create each Fuego brick pizza oven have taken to perfect their technique. Once hand-shaped it dries naturally and is then baked for 36 hours at 1200℃. But that is only half the story.

The clay itself used to make each wood burning oven dome is a very special fire clay peculiar to the Castile region of Spain which has been used since Roman times. It has incredible heat resistance and refractory qualities compared to normal clay and, in the hands of an experienced craftsman, is capable of creating a brick oven that can retain its heat for longer than any other wood pizza oven. In fact, it heats up in half the time of other ovens and can go for several hours without adding any fuel and still be hot enough to cook.

 

Have it entirely your way

Each Fuego Brick oven is completely bespoke, from start to finish. You specify everything. You select the size, the type of finish, such as terracotta brick in the case of this Brick 90 oven. Then, you can add either a standard door or one with a window. There are different chimney options too and also a whole range of traditional Spanish wood oven accessories proven over years to make a genuine difference to your cooking.

What this completely personalised approach to manufacture gives you is a wood fired oven that fits not only your cooking style and capacity requirements exactly, but also aesthetically complements your alfresco cooking and dining area. It couldn’t be more you.

 

Pizza is just one of its many talents

The Brick 90 brick oven isn’t limited to turning out half a dozen perfectly cooked pizzas every couple of minutes. It offers so much more. It achieves superb results when roasting, baking, barbecuing, pan cooking, smoking and even slow cooking – all with that wonderful taste and aroma that you only get from cooking with a wood fired oven. Suitable for indoors or outdoors

Please note, due to the level of fire clay bricks used in the manufacturing of our brick range of ovens, we offer two types of finishes.

Our indoor finish is made from fire clay bricks that go through our normal process of manufacturing, drying and kiln baking at 1200℃ for 36 hours. They are more susceptible to absorbing moisture and therefore we recommend that they are installed indoors or under a roofing structure such as a pergola.

Our outdoor finish is made from bricks that have undergone a double kiln baking process at 1200℃ for 36 hours and then individually coated in clear waterproof sealant to ensure they are more resistant to the outdoor elements. Moisture is the worst enemy of a clay oven even though our ovens have been treated with a waterproof sealant.

We recommend that once a year, you give the external dome of your oven a couple of coats of a clear waterproof sealant to prolong its waterproofing. Please note this only applies to our clasico, brick and stone range of ovens.

Please note that all our oven deliveries are kerbside and do not include installation.

Oven delivery costs depend on your delivery location and oven weight, see below our delivery charges by postcode.

Delivery takes place between 9-5.30pm, Monday to Friday. Unfortunately, a specific time may not be specified, however tracking details will be emailed to you before delivery. Someone will need to be present to sign for your oven delivery.

The Fuego Brick 90 – Professional Brick Pizza Oven wood-fired oven arrives on a standard crated pallet, weighing approximately 600kg. The driver will be able to unload the pallet using a tail lift. The pallet can be manoeuvred on solid, level ground with a pallet truck. Please note, it is not the responsibility of the driver to set your oven in place and/or assemble it

The Fuego Brick 90 – Professional Brick Pizza Oven oven heats up quickly, reaching optimal cooking temperature within 30 minutes.

Follow the instructions for curing the oven during your first light. Failure to follow the curing instructions can cause damage to the oven and will void the warranty.

Due to its insulating nature, the Fuego Brick 90 – Professional Brick Pizza Oven can retain heat in its core form for over 4 hours and maintain a low temperature for up to 12 hours, without the need to add additional wood.
