A Fuego wood-fired oven is the essential BBQ pizza oven. In this section we show you tried and tested techniques for the perfect barbecue cooking of small items such as steaks, burgers, sausages, fresh prawns, fish fillets, skewers, etc, whilst ensuring that your foods get that special wonderful charcoal flavour.

How To Cure Your Wood-Fired Oven

Light up your outdoor pizza oven

Follow the instructions on How to light your Fuego wood fired pizza oven and get your oven up to a temperature of around 225-250°C using kiln-dried wood that has a moisture content of less than 20%.

Barbecued Rib Steak

Prepare your foods

Whilst your wood-fired oven is cooling down in temperature, you can prepare the foods you are going to barbecue or grill with your favourite seasonings, rubs, spices, herb mix or marinade.

Regulate the temperature and barbecue or grill your foods

Using your metal peel or spade, spread the embers and allow the temperature of the oven to drop down to 200°C. Place an oven-proof dish on either side of the embers and sit a wired metal rack on top if you are barbecuing or a cast iron grill if you are grilling and cook your foods to perfection within moments.
