Barbecue & Grilling Tips

The Fuego is the essential BBQ pizza oven. However, here we show you tried and tested techniques for the perfect cooking of small items such as steaks, burgers, sausages, fresh prawns, fish fillets, skewers, etc, whilst ensuring that your foods get that special wonderful charcoal flavour.

 

Spread the embers across the oven floor and sit a steel rack on top to make your own outdoor pizza oven and BBQ or use a cast iron grill to achieve restaurant-style scorch marks on your steaks. Think of it as a masonry BBQ with pizza oven all in one.

Light up your outdoor pizza oven

Start by following the instructions on How to light a Fuego wood fired pizza oven and get your barbecue pizza oven up to a high temperature. This needs to be around 400-450°C and use kiln-dried wood that has a moisture content of less than 20%. If you want to sear or brown the outside of any meat joints prior to cooking, do it at this stage, keeping a watchful eye on your food so you don’t burn it.

Prepare your foods

Whilst your wood fired pizza oven is cooling down in temperature, you can prepare the foods you are going to barbecue or grill with your favourite seasonings, rubs, spices, herb mix or marinade.

Regulate the temperature and barbecue or grill your foods

Barbecuing and grilling with a Fuego wood fired oven is different from the traditional way of grilling with wood chips and charcoal. Using your metal peel or spade, spread the embers slightly and allow the temperature of the oven to drop down to 300°C. Place on a wired metal rack if you are barbecuing or a cast iron grill if you are grilling and cook your foods to perfection within moments in your outdoor BBQ oven.
