Santa Rosalia is Spain’s oldest producer of Wagyu beef and since 1992 has been supplying some of the best Japanese and Michelin starred restaurants in Spain. Each oxen has over 100 square meters to roam, much of the feed comes from the bi-product of the estate’s organic winery and they are settled on biodegradable beds. Even their diet is designed to reduce greenhouse gas!

How does my wagyu beef arrive?
You will receive 2 x 150g pack of wagyu burgers frozen, delivered in a polystyrene box with ice pads. Thaw in the refrigerator for at least 24 hours. Wagyu beef should be taken out of the refrigerator a minimum of 2 hours before cooking to allow the meat to come to room temperature before cooking.
How to cook wagyu beef?
The important thing to remember is that Wagu beef has sufficient fat within each burger and so just needs a the greasing of the pan. The addition of fats such as butter or olive oil will only mask the unique beefy flavour of your wagyu burgers. Lightly salt the burger 5 minutes before cooking to bring out a film of moisture which helps in the creation of a savoury crust on the burger. Ideally use a cast iron skillet or griddle or BBQ grill. Sear on each side for 2 minutes before lowering the heat and cooking to your liking. Allow to reast for at least 5 minutes on a warm plate. Each burger should be thoroughly cooked through.

The Santa Rosalia Wagyu Burgers 300g oven heats up quickly, reaching optimal cooking temperature within 30 minutes.
Follow the instructions for curing the oven during your first light. Failure to follow the curing instructions can cause damage to the oven and will void the warranty.
Due to its insulating nature, the Santa Rosalia Wagyu Burgers 300g can retain heat in its core form for over 4 hours and maintain a low temperature for up to 12 hours, without the need to add additional wood. Do not use standard white firelighters as they contain chemicals that may get into the oven floor and affect the flavour of your food. Never use lighter fluid to start or refresh a fire.
Such as oak, ash, beech, cherry, apple, pear, hawthorn or olive or kiln-dried hardwood with a moisture content of less than 20%. Hardwood produces the most heat and less ash. Softwood has an unpleasant smell and painted or treated wood can give off toxic fumes.
Use smaller logs of approximate 30cm long and 4 to 6cm in diameter. The size of the logs is key to provide the oven with its optimum conditions for cooking.

Our packaging is especially designed to keep your product in perfect condition for up to 36 hours. All chilled foods are sent in Polystyrene (EPS) Boxes to insulate and maintain the temperature whilst on transit.
We also use Sorbafreeze ice pads within the polystyrene boxes to maintain all foods at the correct temperature. Chilled and frozen foods will be kept at temperature for at least 36 hours during transit.
On opening the package customers should take care that the product remains cold and that the ice pad sheets remain at least partially frozen. If the product/s are no longer chilled, or totally defrosted, then the product/s should not be consumed. If this should happen, please contact us within 24 hours of receipt of your order. We cannot take responsibility for spoiled goods, if you do not inform us withing 24 hours of receipt of delivery.
