WHAT IS CABECERO IBERICO?
Cabecero iberico is the pork collar or top of the loin, also known in Italian as coppa or capocollo. This is the muscle running from the neck of the pig to the ribs. After the loin, the cabecero is the third largest muscle from the Iberico pork. Cabecero Iberico is an extremely well marbled pork cut, that lends itself to a variety of cooking methods due to its high level of fat infiltration.
Please note that our cabecero does not include the Presa iberica.
Iberico pork comes from free-range Iberico pigs indigenous to Spain. They live an ideal life rooting for acorns under cork and holm oak trees. Their diet provides a complex flavour and a fat that literally melts in your mouth. The exercise provides the beautiful marbling that distinguishes Iberico pork from any other.
HOW TO COOK CABECERO IBERICA?
We have customers that use the cabecero for sausage making, curing and smoking. It is a great cut that can be cooked like a traditional roast pork shoulder or cut into steaks and cooked on the BBQ.
Cabecero is very quick and easy to prepare for roasting. Once fully thawed, season with salt and pepper and place in a hot oven at 200°C for approximately 30 minutes. Please make sure you use a good meat thermometer to ensure it is not overcooked. Roast until its internal temperature is 57°C for medium rare. Let it rest for 5 minutes, then cut thin slices to best enjoy the flavour.
This pork roast will taste like a roast beef! It really is phenomenal in how it tastes. Try one today to find out!
HOW WILL I RECEIVE MY CABECERO IBERICO?
You will receive one frozen vac pac of cabecero iberico delivered on ice pads. If you are not using the cabecero straight away, store in the freezer. If you are, then you will need to thaw it in the fridge for at least 24 hours before cooking.
PLEASE NOTE THAT WEIGHTS CAN VARY FROM CABECERO TO CABECERO, SO EXPECT A SLIGHT VARIATION ON THE THE WEIGHT OF YOUR CABECERO IBERICO.

Due to its insulating nature, the Cabecero Iberico 1Kg can retain heat in its core form for over 4 hours and maintain a low temperature for up to 12 hours, without the need to add additional wood. Do not use standard white firelighters as they contain chemicals that may get into the oven floor and affect the flavour of your food. Never use lighter fluid to start or refresh a fire.
Such as oak, ash, beech, cherry, apple, pear, hawthorn or olive or kiln-dried hardwood with a moisture content of less than 20%. Hardwood produces the most heat and less ash. Softwood has an unpleasant smell and painted or treated wood can give off toxic fumes.
Use smaller logs of approximate 30cm long and 4 to 6cm in diameter. The size of the logs is key to provide the oven with its optimum conditions for cooking.
Food deliveries take place between 09.00 and 5.30pm, Monday to Friday. Unfortunately, a specific time may not be specified, however tracking details will be emailed to you before delivery.
You must be available to take delivery on the first attempt. Although you can instruct the courier to leave the package with a neighbour or in a safe place if possible, we cannot guarantee that this will happen and cannot take responsibility for spoiled goods where you have not been in to accept delivery. Package will not be re-delivered the next day because of the contents. It will be disposed of and we will not hold any liability if it cannot be left on the delivery day. Our packaging is especially designed to keep your product in perfect condition for up to 36 hours. All chilled foods are sent in Polystyrene (EPS) Boxes to insulate and maintain the temperature whilst on transit.
We also use Sorbafreeze ice pads within the polystyrene boxes to maintain all foods at the correct temperature. Chilled and frozen foods will be kept at temperature for at least 36 hours during transit.
On opening the package customers should take care that the product remains cold and that the ice pad sheets remain at least partially frozen. If the product/s are no longer chilled, or totally defrosted, then the product/s should not be consumed. If this should happen, please contact us within 24 hours of receipt of your order. We cannot take responsibility for spoiled goods, if you do not inform us withing 24 hours of receipt of delivery.
We appreciate that buying food over the internet might seem strange, so at Basco we go to extra lengths to provide you with as much product information as possible. You'll find close-up photos and extended descriptions of our products as well as all the relevant specifications, like ingredients, allergens, directions for use and storage.
We can only deliver chilled and frozen products to destinations where a next-day service is available. Unfortunately, that means UK Mainland only and excludes certain areas of northern Scotland where only a 2-day service is available (please check with us if in doubt).
If your order contains chilled or frozen products and the order is placed on a Friday, the goods will be dispatched the next available working day for next day delivery. You must be available to take delivery on the first attempt.
